I am discovering how much TEMPEH is delicious, filling and does not give you that “I ate soooo much ” feeling! The spices are once again key in the success of this recipe.

Discovery : Worcestershire sauce mixed with apple cider vinegar and some tomato paste make for a great tasty combo.  Wimages-9e never think of simply slicing some cabbage together with a shallot and nuts.

It is son easy to eat well! RIGHT !

Toasting or roasting nuts or seeds…sometimes nice to change things up. Lightly toasting can make the flavour explode to life! Try it! You can do this with any type of nut or seed. (tip from page 138)

The cole slaw with the dijon dressing is delicious!

Surviving  the junk food weekend – or Holiday or any other occasion that requires us to get off track and indulge in the fatty food and alcohol. Well, for this time, Super Bowl XLVIII, I was prepared, homemade green apple, hummus, caulifloer soup and for dinner the “un-sheperd’s pie” of KarmaChow Ultimate cookbook.

The snacks have been part of my ongoing recipes. The “un-sheperd’s pie” is my second time making this delicious dish. The meat is once again replaced with crumbled tempeh. The spices are key to the success of this recipe. The flavours and textures are quite similar to your grand-mother’s shepherd’s pie but a little healthier.

Mashed potatoes…almond milk and olive oil. Cannot ask for anything simpler.

Discovery: crumbling tempeh not always easy but going through the effort makes a difference. Did not have to many dishes to wash after all the prep work. Took about 1 hour to prepare. I replaced the red kidney beans with lentils. I used what I had on hand. The corn was frozen corn from my annual corn roast last summer. Fresh golden corn nothing like it !

Makes 8 portions easily. Make your  portions smaller  because it is very filling and nutritious.

With a little home made chutney; mmm good!

Luscious Limey “Cheese” cake (p.217)

imageA “cheese”cake without cheese… Got your attention ! PLUS no cooking !

A dairy free, creamy, citrusy and delicious cake without all the unhealthy sugars and fat of the classic cheesecake. Today is an almost all vegan day at the firestation. Once a month our shift has us at the house for an entire day (24 hours): breakfast-lunch-dinner.

As you know by now, I am the designated cook for my team. This sunday they wanted CHILI for lunch. Not a problem ! Smokey Tempeh Chili (p. 112).  Chili is always a favorite, simple and easy to make. Tempeh was NEW to everyone ! Everyone loved it. Doubled the recipe and that was enough for 9 guys and 1 girl (that’s me!). The spices were perfect. No one felt bloated or missed the meat. Added some Basmati rice and lunch was served!          (Long grain brown rice would have been the best but you use what you have!)

Discovery: The crust for the “cheese” cake… I used pecans. It is surprising how the cashews creamed up and made a delicious filling. Of course, I licked the spoon !

Difficulty / Solution :

  • Tempeh was frozen when I purchased it. It had not completely thawed, so I chopped it up into little cubes because crumbling was out of the question.
  • Blender unavailable, did it all in the small size food processor, slowly blending ingredients together. Turned out nice, not perfectly smoothe but nice !
  • It cost  $$ was no more than the traditional cake ,

You might notice that the springform pan is not perfectly round. It happens in a fire station. But it worked out and that is what matters! 2 fellows wanted the recipe, now that is a nice compliment for me and for KarmaChow.

9 guys and 1 girl enjoyed the food all day! The cake and chili recipes will be repeated!

Breakfast combo

I have been waiting all  week to get this breakfast done. Veggie Breakfast Scramble (page 31) + Tempeh Sausage patties (page 35).

Got all the veggies at the grocery store, tempeh at the health food store. Swiss Char, zucchini, peppers, onions…

I left out one ingredient; the nutritional yeast. WHY ?  Well, I know it is delicious and good for you BUT it is not popular in my home. It sweetens the dish a little and I do not mind but my partner does. So if we want to share the great breakfast, we teak it a little to make it popular.

I do think that all recipes can be modified to our own tastebuds; more or leas cayenne or sweetness (you know what I mean!)

It was a challenge to get the patties and the veggies done at the same time. I suggest getting the patties going a good 20 minutes before going to the veggies. Makes 3 huge servings of veggies !

Discovery: Dinner was improvised…Tempeh Sausage patties and left over veggies in a delicious wrap with a green salad on the side.

Multipurpose recipes, that is wonderful!
