I decide to invite myself and my partner to my parents for dinner. My mom can no longer cook (Parkinson, but another story in itself!). Honestly, she never really liked to cook but always managed to keep our plates full of food not always our favorites but…if we wanted dessert, we ate the brussels sprouts (which I love today!). So I called her up, said I was bringing everything for dinner and VOILÀ ! We showed up.
I planned for a poached salmon for Mom and I; some ribs for Dad and my love!
Of course vegetables, grilled bokChoi and french fries. PLUS a large Mixed Baby Greens with Walnuts, Pear and Pomegranate Mint Dressing (page 133). Dad had his regular romaine with olive oil and paprika (boring!) . The flavours that were exploding in my mouth with this salad were super fantastic ! You have to try this recipe!
Makes 6 servings…Yeah sure! When Josy is not in the house!
Needless to say, Mom and Dad were happy! And I discovered another great salad! The perfect saturday evening!
